Fried Rice

Ham Fried Rice
Friday night I was actually in the mood to cook. So I thought I should take advantage of it and make something I have never made before or something that is really time consuming. So after throwing a few ideas around I was no longer in the mood because it meant going to the store and I do not like going to the grocery store at 5. So I ended up coping out and making something easy. One part of the meal that I made was fried rice. Chris and I LOVE fried rice. So as I started to pull out all for the ingredients I realized my ham had gone bad ... it smelled like yeast and was slimy. I called mom to double check and she concurred, resulting in a very sad Janessa . What was I going to do!? I opened the fridge and saw the bacon ( already defrosted woo hooo) and thought this will have to do. I don't know why I love ham fried rice so much. I have tried making fried rice with chicken, ham, and bacon but ham is my favorite hands down. Who picks ham over bacon? In this ONE case I pick ham. I will share the recipe with you so you can make it.

2 Cups (precooked) steamed white rice
1/2 Onion -chopped
2 Eggs
2 T Butter
1/4 Cup Frozen peas ( very important they are frozen and very important you do not leave them out even if you hate peas!!
Salt & Pepper
1/2 tsp Ginger
1/4 Cup Soy Sauce
1 tsp Red Pepper Flakes
1/2 -1 Cup Chopped Meat (bacon or ham)

Heat large pan to med high and melt 1 T butter.
Saute Onions until clear.













Remove onions from pan and add chopped ham or bacon to pan. Brown meat.















Once browned, remove meat from pan and scramble 2 eggs. Chop into small pieces














Remove eggs from pan and add 1 T butter and steamed rice.














Pour soy sauce over top of rice. Mix well. You can always add more soy sauce later if you need it but don't be too generous or you will have soggy rice not fried rice. Soggy rice that will be way to salty.
Salt and pepper rice to taste. sprinkle 1/2 tsp ground ginger on rice and shake in pepper flakes (about 4 shakes or to taste)







Flatten rice down in pan like a pancake. Take Eggs onion and meat and pour over top.













Fold in the ingredients and flatten down again.














Let Rice brown for about 1 min. Flip rice over and brown the other side. Do this 2 or 3 times total. making sure the rice is looking a LITTLE crispy when you flip it over. This is a good time to do a taste test to see if it needs more Soy sauce ( salt) or more peppers. Once you are finished browning the rice. Pour Frozen peas onto the rice. Again I am going to say "You cannot leave out the peas!" Even if you don't care for peas. I don't like peas very well but it adds a sweetness that the rice will need or it might be too rich. If you are really stubborn and are not going to listen to me about adding the peas then you have to add something else like frozen carrots pieces or something to give it some texture and some sweetness. Okay?














Once peas are added stir them in and it is ready to serve. the reason I add frozen peas at the very end is so they don't get mushy and have that gross pea flavor. They still have garden sweet flavor.
And Voila!!! Your rice is done and ready to be gobbled up!! You will probably have left overs but you will be glad because it is just as good reheated as it is freshly made.

The Lord's Cookies

Once upon a time I lived in a house.
and I lived there with some wonderful ladies.
Celia-
Anna-
And practically Liz 'cuz she was our bestie and was over all the time.

And we had a lot of fun together. We also had some really really awesome neighbors,
Dave and Kerry-
Dave and Kerry would often make us delicious cookies. These cookies were sooo delicious we were told that you could give them to the Lord. So that is where they got their name " The Lord's Cookies." The recipe for these cookies have a secret ingredient that we tried for months to get Dave to tell us what it was. I think it took my brother Jason years to get it. If I remember right, I think he even snuck into Dave's house once and rummaged thru the recipe box trying to find out what the secret ingredient in these cookies were. Finally Dave gave us the recipe, Secret Ingredient included, and so last night I decided to whip up a batch. I took pictures along the way so you could watch.

Here are the ingredients you will need.
1 1/8 C flour
1/2 c butter @ room temp
1/3 c brown sugar
1/8 c white sugar
1 measure of secret ingredient
1 egg
1/2 tsp vanilla
1 c chocolate chips
1/2 tsp baking soda

Mix the flour and baking soda and set aside.
Combine sugars, butter, secret ingredient and vanilla, beat until smooth.Beat in egg. Gradually add the flour mixture. Once mixed add in Chocolate chips.



Drop round teaspoons full onto and ungreased cookie sheet.


Bake at 375 for 8 min.. no longer than 8 min!
Remove from oven. you may think they are undercooked but they are not :)Remove from pan immediately so they don't keep cooking and let them cool.

They are small cookies so you can have more than just one, and you will, because they are so yummy!

Pizza Night

Every day, I have a hard time thinking of what to make for dinner and Chris is so easy going he just says, "Whatever you want dear." Which is nice AND frustrating. So yesterday when he called me on his way home, he requested we make homemade pizza for dinner. Even though I didn't have 100 % if the ingredients, I was still thrilled that I didn't have to think of anything!! And so we making pizzas is what we did.

Update!!

HA HA HA! Okay so I looked at my blog today and read my very first post. In that post, I had explained that I procrastinate and am lazy but that i was finally ready to get unlazy and I had some projects in the works. So it has been 1 year and 3 months since that post and I wanted to update everyone on the progress I have made.

Project #1 "Super cute baby booties" -These I actually did finish but they were way better in my brain and I had some trouble sewing them. I blame it on my sewing machine which I am not knowledgeable enough to fix so they have just been sitting in my sewing box.

Project #2 "Refurbished nightstand" -Currently it is sitting in the garage with some tools on top in the exact same condition that I purchased it in. Just dirtier.

Project # 3 "Some Christmas decorations ...well plenty of Christmas decorations" - Haven't touched them. ha ha. One of the decorations I have been "working on" ( or putting off) for two years!!! But since my last post I have added a few more Christmas decorations, started them, and then abandoned them. Sad story.

Project #4 "Buying my first house and decorating it" - I bought the house but that is where it stopped. Decorating has been halted for a few reasons* ( excuses) No time, no money, or a comniation of both, also the fact that I am soo indecisive. It's horrible.

Project #5 "Recipes" I have been typing up recipes , but have just forgotten to post them on the blog so I think that this one is do-able cuz I do take pictures of almost everything I eat. Because I love food and that's how fatties roll :)

So now we all can see the extent of my procrastination and laziness. There may be a few reasons/ excuses I have been telling myself that have kept me from being more productive.
They include:
My craft room was a mess ... but now its clean. But I have no shelves so that is kind of hard.
I didn't have a good camera to take pictures of the crafts, but Chris got me one.
I didn't have a Cricut to do half of the crafts i wanted to do, but Chris got me one of those too.... Now I have been "looking" for vinyl for the Cricut for about 6 months, since Christmas.... haha I am the worst!!

Ok, So I will try again, now that the house has been cleaned from top to bottom. Closets included.
Tonight we are making homemade pizzas for dinner so I guess we will start there. There ya go That is what to expect from my next post.
